Cerise de Chance 2022 was primary fermented with Belgian yeast in a stainless tank and was then transferred to neutral oak barrels where it was secondary fermented with Brett lambicus. The barrel-aged beer was transferred onto 1,000 lbs of fresh Montmorency cherries that were picked up at Seaquist Orchards in Door County, WI by our brewers and driven all the way home here to Big Lake, MN. The beer was aged for 6 months on the cherries at a rate of over 6lbs of cherries per gallon of beer.
